Traditional stabilization methods are based on removal of polyphenol-protein complexes and prevention of their formation by either partially removing or hydrolyzing proteins or partial removal of polyphenols or both. Efficient - Brewers Clarex™ is a proline specific endo-protease which will efficiently prevents chill haze formation in beer for over 15 months. Head retention is maintained in beer stored at room temperature for over a year. Natural antioxidant potential of beer is preserved.
Easy To Use - A small volume of Brewers Clarex™ is simply added at the beginning of fermentation. As it is added in the non-oxygen sensitive part of the process, no oxygen ingress appears. The dose rate is adjusted as per adjunct level and required shelf life, typically 1-4 gr/Hl. It is a processing aid, hence no additives labelling is required.
Cost Efective - Brewers Clarex™ requires extremely limited CAPEX and OPEX. No additional waste is required to be removed unlike some other methods which use disposable powders. Since extremely small volumes are involved, there's limited handling and storage costs. Other cost effective aspects are: no beer los¬ses, increase in beer filter capacity, no waste stream i.e. chemicals for regeneration.
Sustainable - The "Particle Free" concept is introduced by combining Brewers Clarex™ with kieselguhr-free filtration. Last but not least, it's an environmental friendly product and concept.
